Hospitality Recruitment in Europe
for luxury hotels, resorts and restaurant groups.

From the Greek islands to London, year-round and seasonal.

Sustera recruits for luxury hotels, resorts and restaurant groups across the United Kingdom, France, Italy, Spain and Greece. Our consultants are based in Europe and the Gulf, and our candidate network reaches well beyond both, so a Mykonos opening and a London flagship are briefed by people who know how differently they hire.

Who We Recruit in Europe

Two sectors,
two rhythms.

Europe's luxury market runs on two calendars: the city properties that trade all year, and the coastal and island venues that live or die by a single season.

Luxury Hotels & Resorts

City flagships in London, Paris, Milan and Madrid, and resort properties on the Côte d’Azur, the Amalfi coast, the Costa del Sol and the Greek islands. Roles we fill most often: general management, rooms and F&B division heads, executive chefs and kitchen brigades, front office and guest relations, and the seasonal leadership teams that open a resort in April and hold its standard until October.

Fine Dining & Restaurant Groups

Independent fine-dining venues, restaurant groups opening across several cities, and beach clubs and destination venues that recruit a full brigade every spring. Roles we fill most often: restaurant and bar managers, head chefs and sous chefs, sommeliers, service leadership, and the operations directors who run multi-site groups.

From line-level roles to C-suite. See our full placement scope.

Why Local Knowledge Matters

What makes hiring
in Europe different?

Five countries, two calendars, and a talent pool that moves between them. We build every search around four realities.

The summer season closes early

Seasonal destinations recruit from January and have their leadership spine in place by March, because experienced seasonal professionals commit early and the best of them return to operators who treated them well. An operator briefing in May is choosing from what is left. We plan backwards from opening day and start with the heads of department.

Work rights decide who can start when

A candidate who can work across the European Union is a different hire from one who needs a permit, and the United Kingdom runs its own sponsorship system since leaving the EU. We confirm work rights before a candidate is presented and build any permit timeline into the search, so the offer you make can actually start on the date you need.

Accommodation and contracts are part of the offer

In island and coastal venues the accommodation, the meals, the transport and the exact end date of the contract matter as much as the salary. Ambiguity on any of them produces departures in August, when a team is hardest to replace. We make sure these points are settled at offer stage, not discovered on arrival.

Guests are international; so is the team

A Marbella beach club, a Milan restaurant and a London hotel serve Gulf, American, Asian and European guests in the same week. We assess language fluency, cultural range and service composure alongside technical skill, and we draw on a network that includes Gulf-trained professionals who already know how a luxury guest expects to be treated.

The Process

How does working with
Sustera in Europe work?

Four steps, no upfront fees. You are invoiced only when the candidate you hire starts.

01

Discovery

A conversation about your property, your season and the roles ahead, online or at the venue. No obligation at this stage.

02

Framework agreement

One agreement covering all your future roles and countries, with fee levels agreed per seniority in writing before any search begins. No minimum volume, no exclusivity.

03

Role briefing

For each position: candidate profile, package including accommodation and contract dates, work-rights requirements, and the timeline we commit to.

04

Search and selection

We approach people through our own network rather than job boards, assess them against your brief and your culture, and present a short, ready list. Every placement is covered by our replacement guarantee.

Client Results

What European clients say.

"We needed a ten-person team: front of house, kitchen, and guest relations, ready before our summer opening. Sustera delivered candidates who didn't just have the right experience. They understood the energy a luxury property in Greece demands. The speed was exceptional. The quality is what we remember."

Questions

Hiring in Europe,
answered.

The United Kingdom, France, Italy, Spain and Greece, for both year-round city properties and seasonal coastal and island venues. Our consultants bring direct experience of the Netherlands, Portugal and Bulgaria as well, and our candidate network covers the whole continent. If your property is elsewhere in Europe, ask us; we will tell you honestly whether we can serve it well.

Yes. Seasonal team builds are a core part of our work in Greece and Spain: leadership first, then service, kitchen and guest-relations teams in sequence. We recruit for stamina and cultural range as much as for skill, because a luxury season is judged in its fourteenth week, not its first. Returning talent is part of the plan from the start.

We confirm each candidate's right to work in your country before presenting them. Candidates with EU citizenship can start across the Union without a permit; for the United Kingdom and for non-EU nationals elsewhere, the employer sponsors the permit and we build the lead time into the search. We also draw on professionals who already hold the right to work in the market concerned, which keeps timelines short.

Yes, and it is one of the reasons European operators work with us. Professionals who have served luxury guests in Dubai, Doha or Riyadh arrive with service standards, multilingual fluency and composure that transfer directly to a European flagship or resort. We present them only when their work rights and relocation plans are settled.
