Hospitality Recruitment in Türkiye
for Istanbul, the coast and the teams that move between them.
Founded by a Turkish hospitality leader. Hiring for Türkiye and placing Turkish talent abroad.
Sustera recruits for luxury hotels and resorts, fine-dining venues and restaurant groups in Istanbul and the coastal markets of Bodrum, Fethiye, Marmaris and Antalya, and for employers in every other Turkish city. We also place Turkish hospitality professionals into the Gulf and Europe, so we know both sides of the move that so many careers in this market involve.

and everywhere between.
Two markets inside one country: a year-round city of international flagships, and a coastline that recruits an entire workforce every spring.
Luxury Hotels & Resorts
International and locally owned five-star hotels on the Bosphorus and in the historic city, and resort properties from Bodrum, Fethiye and Marmaris to Antalya. Roles we fill most often: general management, rooms and F&B division heads, executive chefs and kitchen brigades, front office, guest relations, and seasonal leadership teams for the May to October coast.
Fine Dining & Restaurant Groups
Istanbul’s fine-dining scene, restaurant groups expanding at home and abroad, and the beach clubs and destination venues of the coast. Roles we fill most often: restaurant and bar managers, head chefs, sommeliers, service leadership, and operations and culinary directors for multi-site groups.
From line-level roles to C-suite. See our full placement scope.
What makes hiring
in Türkiye different?
We recruit in Türkiye the way we were trained in it: from the inside. Four realities shape every search.
Two calendars, one talent pool
Istanbul trades all year; the coast opens in late spring and closes in autumn. The same professionals often move between the two, and the best seasonal teams are recruited in winter, not in May. We plan coastal searches from January and keep year-round city roles moving alongside them.
Turkish talent is in demand abroad
Turkish hospitality professionals are sought after in the Gulf and Europe for their service culture, language range and work ethic, which means a Turkish employer competes with Dubai and London for the same people. We know what those markets offer because we place into them, and we help Turkish employers build offers and career paths that keep their best people at home.
International teams need the right permits
Bringing a foreign national into a Turkish property means a work permit sponsored by the employer, with its own lead time. We confirm requirements before a candidate is presented and build the timeline into the search. For international properties we also assess Turkish-language ability realistically against what the role actually needs.
The guest profile is changing
Istanbul and the coast now serve Gulf families, European and Russian travellers and a demanding domestic clientele at the same time. We assess cultural range and composure alongside technical skill, and we draw on Gulf-trained professionals, many of them Turkish, who already know how a luxury guest expects to be served.
How does working with
Sustera in Türkiye work?
Four steps, no upfront fees. You are invoiced only when the candidate you hire starts.
Discovery
A conversation about your property, your season and the roles ahead, in Turkish or English, online or at the venue. No obligation at this stage.
Framework agreement
One agreement covering all your future roles, with fee levels agreed per seniority in writing before any search begins. No minimum volume, no exclusivity.
Role briefing
For each position: candidate profile, package and accommodation where relevant, permit requirements for international hires, and the timeline we commit to.
Search and selection
We approach people through our own network rather than job boards, assess them against your brief and your culture, and present a short, ready list. Every placement is covered by our replacement guarantee.

What clients in Türkiye and the region say.
"We had been searching for a Purchasing Director with the right combination of luxury standards and regional market knowledge. Sustera presented candidates our internal process simply hadn't been able to reach. The shortlist arrived faster than expected and the quality was there from the first CV."

Hospitality · Management Search"We took our restaurant to a Greek island for the summer and needed a full team recruited in Türkiye: a head chef who knew both markets, service leadership and the line team, all in place before opening. Sustera handled the whole brigade. Our guests never noticed it was a first season."

Istanbul and every other city, plus the seasonal coastal markets of Bodrum, Fethiye, Marmaris and Antalya. Our founder built her career in Istanbul and our consultant for Türkiye works across the country and into Portugal, Spain, Bulgaria and Greece, so cross-border searches are routine for us.
Yes. A large part of our candidate network is Turkish hospitality talent, and we place it into luxury hotels, resorts and restaurant groups in the Gulf and Europe. For Turkish employers this cuts both ways: we understand exactly what you are competing with, and we help you build offers and career paths that hold your best people. For professionals, placement through our network is free; see For Professionals.
It depends on the role and the property. Guest-facing roles in venues with a largely domestic clientele usually need Turkish; international flagships and resort properties often run in English with Turkish as an advantage. We agree the real language requirement at the briefing stage rather than screening out strong candidates on an assumption.
The employer sponsors the work permit and the process has its own lead time. We confirm requirements before a candidate is presented, build the timeline into the search, and brief the candidate on what to expect between offer and start date.
